A Very simple but very satisfying recipe. The hardest bit is skinning the tomatoes ! We are not sure exactly where this one comes from, certainly Eastern Mediterrainian.. possibly Turkish, and the use of Caraway seeds gives it an exotic taste, particularly to us westerners. Buy the biggest King Prawns you can find. 2 per person. If you can find very big ones, one per person looks better on the plate |

| Start by slicing the Garlic
thinly, and chopping the Green Pepper into squares, about 1 centemeter. Cover the bottom of a smallish saucepan with Olive Oil and ently fry the Garlic for a minute or so until it just begins to turn colour, then add the Green Pepper and continue to gently fry until softened. 15 minutes, say. Stir it from time to time. Whilst this is going on, we may as well prepare the rest of the ingredients, so skin. de -seed and chop the tomatoes, crumble the red chilli, and take the shells off the king prawns, and the heads, and de -vien them. If you haven't skinned and de-seeded tomatoes before, here is how it's done :- Put the Tomatoes in a bowl or a measuring jug and cover it with boiling water. Leave for about 30 SECONDS. Don't leave it too long, or the tomatoes will begin to cook, and we don't want that to happen. Take them out of the hot water, nick the skins with the point of a knife, and the skin should peel off easily. Stand the tomato on the stalk end and
cut into quarters, then cut out the seeds. Ok. The pepper should be softened by now, so add the crumbled Chilli and the Caraway Seeds. Careful now.. These are powerful flavours, don`t be tempted to add a 'bit extra'. Stir for about 30 seconds to a minute, and then add the prepared tomatoes. Simmer gently for 10 to 15 minutes. At this point, you may as well chop the Flat Leaf Parsley, reasonably finely. Add the sugar (to balance the chilli) Check the seasoning and add salt as necessary, and freshly ground Black Pepper. And Finally... add the King Prawns. Stir and cook for 3 to 4 minutes.. and it's done ! Serve wth the Parsley sprinkled over |
