Buy a new bottle of soda water for this recipe, and put it in the fridge, unopened, well in advance. We need it to be ice cold and fizzy. |

| Open the Oysters.
You need between 4 and 6 per person as a starter. Take the oysters out of the shell, but
keep the shells, we need them to serve the oysters in when we have finished, so give them
a scrub to make them look presentable. Make the dipping sauce by combining the soy sauce, water and lime juice, and put it in little bowls, one for each person. We need to deep fry the oysters, so put enough sunflour oil in a pan and heat it up. Put the flour in a bowl, add a pinch of salt, and stir in the ice cold soda water. Don't be too vigorous, we need the water only just mixed. If there are lumps of flour, this is ok. Dip the oysters in the batter, one at a time, and fry them in the hot oil for about a minute. The batter should be crisp and golden. Take them out of the oil, ad let them drain for a moment on some kitchen paper before putting them back in the shells for serving. It does help sometimes to use the top part of the shell, shiny side up, as a sort of stand for the oysters to help stop them falling over. |
