PRAWN CALDINE

Another Spectacularly good and simple recipe. The method is Thai, but some of the spices are Indian, so we are not sure which category to put it in.

Never mind, Just cook it. Preferrably in a Wok. It won't take long....and enjoy.

INGREDIENTS


10 Raw King Prawns. Shell on. Head Off
Groundnut Oil
1 400ml Tin Coconut Milk
Lemon Juice
2 Cloves of Garlic
A 1 inch piece of Fresh Ginger
1 Onion
2 Large Green Chilli
1 Tablespoon Coriander Seeds
1 Teaspoon Cumin Seeds
1 Teaspoon Black Peppercorns
2 Tablespoons White Poppy Seed
1 Teaspoon Turmeric Powder
White Wine Vinegar
Salt
Coriander Leaves

PREPARATION

Start with the King Prawns. Take the shells off, and de -vein them. Put them in a bowl, and pour over some white wine vinegar, with a little salt, and leave them to marinade for 10 minutes or so.

Take the Coriander seed, Cumin seed, Black peppercorn and white poppy seed and if you have a spice grinder, grind them up in that. If not, give them a good seeing to in a mortar and pesle. We have a heavy granite one which is ideal. Then mix in the Turmeric.

Finely slice the Onion, Garlic and Ginger. Take out the seeds from the green chillies and slice them into thin wispy strips. We are using the large mild variety here, we are not competing in a who can cook the hottest curry competition. Open the tin of Coconut Milk

Right. That's all the preparation done. Now comes the easy bit.

Put your wok over a medium heat and let it get warm, before pouring in 2 or 3 tablespoons of Groundnut Oil.

Put the onions in first, followed by the Garic and Ginger. Stir fry for 3 or 4 minutes.

Now add the spice mix, and stir fry for another minute or so, before adding the Coconut milk.

Bring the whole thing up to a simmer and add the Green Chilli. Let it simmer very gently for 2 or 3 minutes.

Taste it. Add Lemon Juice and salt. Taste it again. We need a balance between all the flavours.

Now for the Prawns. drain them, and add them to the Caldine, Cook for 3 minutes, not more, or they will be overcooked.

Scatter some chopped Coriander leaves over, and it's done.
