| It's very difficult to give
a recipe for Salad Nicoise as there are many variations. As a general rule, it should
contain Anchovy fillets, eggs, lettuce, Tuna and Black Olives, preferably the small French
Nicoise olives. We tried this recently at a smart restaurant in the square in Portofino, where they also used grated carrot, which was very good. To be perfectly honest, in Portofino, this was all we could afford ! So, here is our version.

quantities, but as a general guide, use at least one egg and four anchovy fillets per
person.

PREPARATION

| Boil the potatoes
first, as they will take the longest to cook, 15 to 20 minutes say. Dice them when they
are cooked Whilst this is going on, put the eggs in a pan with cold water, bring to the boil and simmer for 5 minutes or so. We want the eggs to have slightly soft yolks. sear the Tuna in a hot pan with some oil on both sides for about 2 to 4 minutes each side, depending on how thick the steak is.
