Asparagus, Samphire can be a little difficult to find. It is worth seeking out, and can be
used as a vegetable accompaniment to any fish recipe, or it can be used as a very simpe
starter. Samphire is quite salty, so do not add any salt. |

Allow 2 ounces of Samphire per person. Drop the Samphire into unsalted boiling water and blanch for one minute. Make a dressing with 5 parts extra virgin Olive Oil and 1 part Lemon Juice, and spoon over the warm Samphire. Decorate with parmesan shavings and perhaps a little freshly ground black pepper. |
