VEGETARIAN

Sometimes refered to as Sea Asparagus, Samphire can be a little difficult to find. It is worth seeking out, and can be used as a vegetable accompaniment to any fish recipe, or it can be used as a very simpe starter.

Samphire is quite salty, so do not add any salt.

INGREDIENTS

Samphire
Olive Oil
Lemon Juice
Parmisan Shavings

PREPARATION

Allow 2 ounces of Samphire per person.

Drop the Samphire into unsalted boiling water and blanch for one minute.
